Good grilling starts with good ingredients.
So you will have to make sure that you are using good charcoal. Avoid lighter fluid if possible and get a charcoal chimney that will allow you to start the coals using newspaper (remember newspaper?)
Once you get the coals hot and well lit, wait until there is a fine white ash around the coals and then distribute around the base of the grill.
Make sure the grill is clean. I like to get the grate hot and then scrub it with a wire brush. You can then put oil on the grate to prevent sticking.
