Keep it Simple


There is a lot happening in the city right now, and the coming months are looking uncertain. With schools, restaurants, and businesses closing, a lot of us have decided its time to stay indoors for a while.


In times like these, cooking can be a great comfort. We don’t need to make fancy meals, we need simple, easy, no stress, and most importantly, inexpensive. With a lot of people facing unemployment, its time to get creative and come up with recipes that don’t break the bank.


My mother-in-law recently reminded me of one of the most delicious simple recipes; the humble rice and beans. There are so many things you can do with those two ingredients! They are both relatively subtle flavors, so you can change it up and make many different dishes. Here is one of my favorites:




Rice and Kidney Beans


-2 cups cooked rice

-1 can kidney beans, drained

-1 can diced tomatoes

-2 tsp chili powder

-1 tsp salt


1. Mix together beans, tomatoes, chili powder and salt in a saucepan and heat through.

2. Add rice and mix, adjust seasoning to taste. Enjoy!
